Originally owners of 3 Amigos in downtown Edmonton, Ken Rosales-Hernandez and Pamela Higueros traded their restaurant for a stall at Bountiful Farmers’ Market. Here, they provide delicious Mexican salsa and tres leches cakes to directly to Edmontonians.
What are you looking forward to about this year’s Taste of Edmonton?
I think this year we are looking forward to see the crowd turn. It’s been a rough last couple of years and I think people are just wanting to be able to get outside and enjoy themselves. Also working with all the vendors again, many of which we have know for years, and Donovan the Taste GM he’s so helpful and awesome! We are looking forward to a great year at Taste!
What is your favourite dish on your Taste of Edmonton menu?
We have 3 menu items, Nachos de Cochinita Pibil, Tostada de Birria, and Tres Leches Cake. I think the one I am most excited for is the Birria! We use rib eye and brisket and simmer it for 5 1/2 hours until it falls apart! With so many people on the Birria trend right now it’s nice to showcase it on something other than tacos! Although we do sell the tacos at Bountiful, Birria is really diverse, and tostadas are just another way to enjoy!
